fried egg + rice and roasted veggies
10 August 2011
this is one of the easiest summer dishes to make. kasi suggested that we try this quick dish {often made by his mom} on a night when we were low on ingredients to make any sort of decadent meal.
fried egg + rice and roasted veggies
1 cup rice
fresh vegetables of your liking
1 tsp butter
olive oil
2 eggs
salt, pepper, dry basil flakes, rosemary
cook your rice in a rice cooker or on the stove. roast veggies of your choice in the oven for 7-10 minutes at 400* on a baking sheet with olive oil, add salt + pepper and other spices for taste. fry 2 eggs in a frying pan with 1 tsp butter and 1 tsp olive oil. add salt + pepper, basil and rosemary. try to leave the yolk a little runny if you can, so that it mixes with your veggies and rice. add rice, roasted veggies, and fried egg to your plate. serve with siracha:) and enjoy!
