persian breakfast {for dinner}

one of our ultimate favorite dishes to eat in any season, but especially perfect for summer when you just want something fresh and light to eat, is a dish we call "persian breakfast."

i had this dish for the first time at kasi's when his parents made it for breakfast and have been completely hooked every since.  i love it so much that i usually try to recreate it at least once a week, usually for dinner, unless it's the weekend and we eat this for brunch.

persian bread, warm {this can also be pita bread or any kind of flatbread}
2 chopped persian cucumbers
4 chopped vine ripe tomatos
a handful of fresh parsley
2 handfuls of fresh arugala
2 tbsp of fresh feta cheese

simply fill a piece of flatbread with all of the above goodies and roll into a tiny wrap.  the combination of flavors are so fresh and just perfect, you'll instantly be hooked.  we had this for dinner on sunday night after a weekend of indulging in lots of good food and drink.
